Each class has a style and a behavior that it brings out in people. If you're being a Thief, then you are probably not charging into battle, but being more sneaky. If you're playing a Berserker, you're probably going to rush into things and not ask too many questions. You can find descriptions of each class's personality on its respective page, and decide which of those traits might show up in your character. No two thieves are exactly the same, after all!
Many classes have a maximum "worn AV". This refers to the heaviest armor they can wear while still using their abilities and applies to the AV of equipment types themselves prior to factoring in the effects of any properties or abilities. If you wear armor above your class' maximum worn AV, you lose all abilities of that class.
